4 cups water
1 cup stone-ground grits
1/2 tsp. Salt
2 tablespoons butter
1 cup shredded sharp cheddar cheese
1/2 cup Parmesan cheese, freshly grated
A pinch each of freshly ground white pepper, cayenne pepper and nutmeg

6 slices bacon, chopped
1 pound shrimp, peeled and deveined, rinsed and patted dry
2 cups sliced mushrooms
1 cup thinly sliced scallions
1 large clove garlic, minced
4 teaspoons lemon juice
Hot red pepper sauce to taste
Salt and pepper to taste
1/2 cup chopped parsley

Grits:
Bring water to a boil. Add grits and cook until water is absorbed, about 20 to 25 minutes.
Remove from heat and stir in salt, butter and cheeses. Add the white pepper, cayenne and nutmeg

Rinse shrimp and pat dry. Fry the bacon in a large skillet until browned; drain well. In bacon grease, add shrimp and mushrooms, stir well. Cook until shrimp turn pink. Add chopped bacon,scallions and garlic. Saute for 3 minutes. Season with lemon juice, pepper sauce and salt and pepper. Sprinkle with parsley.

Spoon grits into a serving bowl. Spoon the shrimp mixture over the grits. Serve immediately.
