1 Bunch of greens (about 1-1/2 lbs.greens)
(I usually use Kale or Collards)
About ½ pound bacon microwaved, crisp, (save the drippings)
1 large onion, chopped
2 cloves of garlic, peeled and minced
1-2 T.of olive oil
3-4 T. of brown sugar
½ tsp. ground mustard
¼ tsp. white pepper
½-1 tsp. salt (your taste preference)
3-4 T. cider vinegar
Pinch of nutmeg

Wash and clean greens. Trim large veins.
Chop very fine.
Microwave bacon to crisp and crumble it.
Pour drippings into a large kettle. Add olive oil.
Add chopped onion and minced garlic and saute
Add finely chopped greens and sauté.
Cook over medium heat with lid on for about 8-10 minutes.
Add bacon, brown sugar, ground mustard, pepper, salt, nutmeg and vinegar. *
Cover and cook a few minutes (5-10 minutes) until tender.

*Add more or less spices according to your taste.
