8" or 9" pie crust
1 3/4 cups flour
1/2 cup oil
1 tsp. salt
3-4 Tbsp. cold water

10" pie crust or 2 crusts
2 2/3 cups flour
3/4 cup oil
1 tsp. salt
4-5 Tbsp. cold water

Directions:
Directions:
Mix flour and salt in a bowl. Add oil slowly, stirring until particles are the size of small peas. Sprinkle in water 1 Tbsp. at a time; mixing until flour is moistened and dough almost cleans the side of the bowl and forms a ball. (If too dry, add 1 or 2 Tbsp. of oil - do not add more water.) Place ball of dough (divide in 2 for 2 crusts) between 2 sheets of wax paper. Wipe counter with a damp cloth to keep wax paper from slipping. Roll 2" larger than the size of the pie pan. Peel off top paper. Place pastry, paper side up, in the pan. Peel off last sheet of paper. Trim and finish edges. Prick with a fork before baking at 400 for 10-15 minutes.
