12 ounces Spinach

1 large Red or Orange Bell Pepper

1 small Onion

1 whole Green Chile or 1/4 cup frozen Green Chile

1/2 pound Canadian Bacon

1 clove Garlic

1/2 tsp Salt

1/2 tsp Pepper

2 tsp Italian Seasoning

2 tbsp Olive Oil

12 ounces Rotini Pasta

1/2 cup Grated Parmesan Cheese

Directions:
Directions:
1. Clean and remove stems from spinach, remove stems, veins and seeds from peppers and green chile. Dice pepper, onion, green chile, and Canadian bacon. Mince garlic.



2. Bring two quarts of water to a rolling boil in a large saucepan. Add pasta and cook to al dente following package instructions.



3. Heat olive oil over medium flame in 12-inch sauté pan. Add pepper, onion, green chile, Canadian bacon, garlic, salt, pepper and Italian seasoning. Sauté for 3-5 minutes and add spinach, cook until wilted.



4. When pasta is done, drain and place in a large mixing bowl. Add spinach mixture and toss with parmesan cheese. Serve immediately OR cover and place in refrigerator for 4-6 hours.
