Waffles:
2 1/4 cups flour
2 Tbsp. sugar
1 package yeast
1/2 tsp. salt
1/4 tsp. cinnamon
1 3/4 cups milk
2 medium eggs
1/3 cup vegetable oil or melted butter

Butterscotch Sauce:
1 1/4 cups packed brown sugar
2/3 cup light corn syrup
1/4 cup milk
1/4 cup butter

Directions:
Directions:
Waffles: The night before, in a large mixing bowl stir together flour, sugar, yeast, salt and cinnamon. Add milk, eggs, and oil. Beat until thoroughly combined. Cover loosely and refrigerate overnight.

The next morning, stir batter. Pour about 3/4 cup batter into a preheated, lightly greased waffle baker. Close lid and do not open until done. Bake according to the manufacturer's directions. when done, use a for to lift waffle off of grid. Repeat with remaining batter. Waffles can be kept warm in 200 oven until ready to serve.

Butterscotch sauce: Combine all ingredients in saucepan and bring to a boil. Reduce heat and simmer, stirring occasionally for 20 minutes. Serve warm over waffles.
