¾ plus 1 tablespoon semi sweet chocolate (melted)
7 tablespoons butter (melted)
1 cup plus 2 teaspoons granulated sugar
3 tablespoons amaranth flour
3 tablespoons quinoa flour
½ vanilla extract
⅓ cup pecan pieces (toasted)
3 eggs (room temperature)
¼ teaspoon sea salt

Preheat the oven to 350° 20 minutes prior to baking.


In a double boiler or microwave, melt the chocolate and butter together. Cool slightly.

In a mixing bowl whisk together the eggs, sugar, salt, and vanilla extract. Whisk rapidly for one minute or more to make the mixture frothy and thick.

Add the melted chocolate and butter. Stir well.

Add both flours and the pecans. Stir to incorporate.

Spray an 8“ x 8“ baking pan with nonstick cooking spray.

Pour batter into the prepared pan.

Bake for 24 to 26 minutes or until a toothpick comes out almost clean. There should be moist crumbs on the toothpick.
