2 lb. cubed watermelon
1-2 drops pepper mint essential oil (or to desired mintiness)
2 Tbsp. chia seeds ground in the coffee mill
juice of two limes
1 c. almond milk
1 Tbsp. coconut sugar if watermelon isn't sweet enough
2 kiwis, peeled and diced

Directions:

Blend all except the kiwi in the blender until smooth. Chill for at least an hour. Divide soup into cups. Add a little kiwi to each serving.
