1 pineapple
1 mango
1/2 c. unsweetened macaroon coconut
2 c. water
1 Tbsp. lime juice
1/4 tsp. basil
Pomegranate seeds

Directions:
Peel and chop pineapple and mango. Blend coconut and water in blender for several minutes. Pour homemade coconut milk through a sieve to remove pulp. Return coconut milk to the blender. Retain a few pineapple bits to add to the soup later. Blend the rest of it with the mango and coconut milk until very smooth. Add lime juice and basil, and pulse briefly. Serve chilled with pomegranate seeds on top.

This is very refreshing on a hot summer day. The hint of basil is really what makes this one special. Pineapple is anti-inflammatory, is good for the immune system and just tastes yummy.
