2 packages frozen spinach, 4 T. butter, 2 T. flour, 3 T. chopped onion, ½ cup evaporated milk, ½ cup vegetable cooking liquor, ½ tsp. pepper, ¾ tsp. celery salt, ¾ tsp. garlic salt, 6oz Pepper Jack Cheese, 1 tsp. Worcestershire Sauce, red pepper to taste.

Cook spinach according to package directions; drain and reserve cooking liquor. Melt butter in a sauce pan over low heat. Add flour and stir, making a light roux. Add onion and cook until soft. Add liquid ingredients gradually and stir. Combine with the drained spinach. Serve immediately or refrigerate and heat in 350ºF oven for 40-50 minutes.
