Apple Cake


Ingredients:

2 C. Sugar
1 1/2 C. Vegetable Oil
4 Large eggs
1 t. Vanilla extract
2 1/2 C. All purpose flour
2 t. Baking powder
1 t. Ground cinnamon
1 t. Salt
3 C. Peeled and chopped tart apples
1 C. Chopped pecans

Pre-heat oven to 350º.

Grease and flour a 12 C. fluted pan.

In a large bowl, beat sugar and oil on medium speed until combined. Add eggs one at a time, beating well after each one.

Beat in vanilla.

In a medium bowl combine flour, baking powder, cinnamon, and salt. Sift and gradually add to sugar mixture beating until combined. Stir in apples and pecans.

Bake for 1 hour to 1 hour 10 minutes or until done. Cool in pan for 10 minutes. Remove from pan and cool on a wire rack. Spoon warm caramel glaze over cake.
 

Carmel Glaze

1 1/2 C. Firmly packed brown sugar
1/2 C. Butter
1/2 C Chopped pecans
3 t. Milk

Directions:

In a small sauce pan, combine all ingredients.

Bring to a boil over medium high heat.

Cook until temperature reaches 234 degrees on a candy thermometer, stirring occasionally.
