2 lbs ground beef
3 beaten eggs
2 cups salsa (Divided)
1 can drained and rinsed kidney beans
1 can mexicorn, drained
1 medium chopped onion
2 cans 2 1/4 oz each black olives drained
3/4 cup crushed saltine crackers
2 envelopes taco seasoning
1 tsp cumin
1 tsp chili powder
2 cups shredded cheddar cheese

Directions:
Directions:
Pre-heat oven to 350
In bowl, beat eggs, 1/2 cup (only) of salsa, kidney beans, corn, onion, olives, crackers, taco seasoning and raw beef.
Grease loaf pan. Put mixture in it. Bake 55 minutes at 350.
Take out of oven, put 1 1/2 cups salsa and cheese on top and bake 10 more minutes.
Cool for 10 minutes.
Serve with sour cream and more salsa.
