Black Bean Chicken Chili Recipe

1 Sweet Onion, Chopped
1 Jalapeno, seeded and chopped (optional)
2 tsp. canola oil
1 tsp. garlic (powder or minced)
1 tsp. cumin
1 tbsp. chili powder
1 rotisserie chicken, shredded-3 cups
2 cans black beans
2 cans enchilada sauce
1 cup chunky salsa
salt and pepper

Brown in Pan: onion, jalapeno (optional) canola oil

Season with: garlic, cumin, chili powder

Add: chicken, black beans, enchilada sauce, salsa and salt and pepper

To serve: Top with Shredded Cheddar Cheese and Sour Cream and serve with a Corn Muffin
