1 head green leaf Kale, about 8 cups washed and tthinly sliced
1.5 tbsp. good wine vinegar
1.5 tsps. of minced shallots, more if desired.
sea salt to taste
6 tbsp. extra virgin olive oil
freshly ground pepper
.25-.50 cup dried cranberries
.25-.50 cup toasted walnuts or almonds
1 tbsp. fresh lemon juice

Directions:
Directions:
about 10 min making salad- put vinegar in a bowl over shallots w/ a pinch of salt and let stand-very important. Then slowly whisk in olive oil. salt and pepper to taste.

Pour dressing over kale and toss well,(I thought dressing was too much-made too wet) Then toss in cranberries, nuts. feta and lemon juice. Serve immediately or refrigerate.
