1/2 cup butter softened to room temperature
1/4 cup packed brown sugar
1 egg, separated
1 teaspoon of pure vanilla extract
1 cup all purpose flour
1/4 teaspooon table salt
3/4 cups finely chopped walnuts
Fig jam or similar

Directions:
Heat oven to 350 degrees. In kitchenaid mixer, blend butter and sugar using the paddle attachment. Scrape the bowl. And the egg yolk and vanilla, mix to incorporate. Measure flour in seperate mixing bowl, add the salt, and use a whisk to blend. Add to mixer and slowly mix. Roll dough into balls (1 teaspoon per ball). Beat egg white in small bowl. Roll the dough in the egg white and then in the nuts. Place one inch apart on a cookie sheet with parchment paper. Press your thumb gently in the middle to make a well. Bake f10 to 12 minutes or until set. Fill with fig jam or tinted icing.

I have added the fig jam and baked it in the cookies. It tends to set up better for storage but either way works. You can use ANY jam and make these any time of the year.
