Pineapple Upside Down Cake Recipe

1/3 cup spry
1/4 tsp salt
1 tsp vanilla
1/2 cup sugar
1 egg, unbeaten
1 1/2 tsp baking powder
1 1/4 cups sifted flour
1/2 cup canned pineapple juice
1/2 cup brown sugar, firmly packed
5 slices canned pineapple
5 maraschino cherries (optional)
2 tbsp butter

Melt butter and brown sugar in cast iron pan
Add pineapple slices and cherries
In separate bowl, mix remaining ingredients
Carefully pour cake mixture over pineapple in pan.
Carefully place pan into heated oven and bake.
Turn cake over onto serving dish when done.
