1 tlbs flour
1/2 cups sugar
1/4 tsp salt
2 egg whites - room temperature - very important
1/2 tsp vanilla
2 cups flaked coconut

Directions:
Directions:
Preheat oven to 325. Lightly grease and flour cookie sheet and set aside.

In small bowl combine flour, sugar and salt. Mix well and set aside. In large mixer bowl beat egg whites until stiff but not dry. Beat in vanilla. Fold in dry ingredients then coconut. Drop by rounded tsps onto cookie sheet about 2" apart.

Bake 20 to 25 minutes or until pale golden brown.

Cool on cookie sheet, set on wire racks.

Makes about 2 dozen cookies. Freeze one month or 2 weeks at room temperature.
