2 C herb seasoned stuffing mix
3 Tb butter, melted
1 lb. yellow squash, sliced
1 lb. zucchini squash, sliced
2 carrots, peeled and shredded
C onion, chopped
1 (2 oz) jar diced pimento, drained
1 (10 oz) can cream of chicken soup, undiluted
1 (8 oz) sour cream
tsp salt
tsp pepper

Directions:
Directions:
Preheat oven to 350.
Combine stuffing mix and butter, stirring well.
Spoon 2 C stuffing mixture into lightly greased 9 x 13 pan. Set aside baking side and remaining stuffing mixture.
Cook squash and zucchini together in small amount of boiling water until tender (6-8 minutes).
Drain and mash.
Drain again.
Add carrots, onion, pimento, soup, sour cream and seasonings, stirring well.
Spoon into prepared baking dish. Sprinkle with remaining stuffing mixture.
Bake for 30 minutes.

Yields: 8 servings
