6 medium potatoes, peeled and cut in quarters
C-1 C milk
4 Tb butter
Salt/pepper to taste
5 C water

Optional: sour cream to taste when beating

Directions:
Directions:
Place potatoes in water immediately after peeling and cutting. This prohibits them from turning brown.
Boil water and potatoes on medium high heat for 10-15 minutes.
Potatoes should be soft enough to fall apart when touched with fork.
Drain potatoes and place in mixing bowl.
With hand mixer or manual potato masher, mash potatoes, adding milk slowly as needed for creamy consistency.
Add salt, pepper, and butter.

Yields: 4 servings
