6 medium potatoes, peeled and cut in quarters
½ C-1 C milk
4 Tb butter
Salt/pepper to taste
5 C water

Optional: sour cream to taste when beating

Directions:
Directions:
• Place potatoes in water immediately after peeling and cutting. This prohibits them from turning brown.
• Boil water and potatoes on medium high heat for 10-15 minutes.
• Potatoes should be soft enough to fall apart when touched with fork.
• Drain potatoes and place in mixing bowl.
• With hand mixer or manual potato masher, mash potatoes, adding milk slowly as needed for creamy consistency.
• Add salt, pepper, and butter.

Yields: 4 servings
