Broccoli Cheese Casserole Recipe

2 lbs. frozen broccoli, thawed
1 10 3/4 oz. can Cream of Mushroom Soup
1 medium onion, diced
1 lb. med. sharp Cheddar cheese, grated
2 eggs
salt and pepper, to taste
1 pkg. Ritz crackers crushed

Preheat oven to 350.
Spray PAM into a 13x9 pan.
Combine all ingredients except Ritz crackers in a large bowl.
Mix well and spoon into pan.
Cover with foil and bake for 50 minutes.
Remove foil and sprinkle crushed Ritz crackers on top of casserole.
Bake, uncovered, for an additional 10 minutes or until crackers are golden brown.
Let sit for 10 minutes before serving.
