2 lbs. frozen broccoli, thawed
1 10 3/4 oz. can Cream of Mushroom Soup
1 medium onion, diced
1 lb. med. sharp Cheddar cheese, grated
2 eggs
salt and pepper, to taste
1 pkg. Ritz crackers crushed

Directions:
Directions:
• Preheat oven to 350°.
• Spray PAM into a 13x9” pan.
• Combine all ingredients except Ritz crackers in a large bowl.
• Mix well and spoon into pan.
• Cover with foil and bake for 50 minutes.
• Remove foil and sprinkle crushed Ritz crackers on top of casserole.
• Bake, uncovered, for an additional 10 minutes or until crackers are golden brown.
• Let sit for 10 minutes before serving.
