LARGE CAKE (2 layers, 9” each or 1 oblong 9 x 13”)
• 2 ¼ cups plain flour
• 1 2/3 cups sugar
• 1 ¼ teas baking powder
• 1 ¼ teas baking soda
• 1 teas salt
• 2/3 cup soft shortening
• 2/3 cup buttermilk
• 3 ripe bananas, mashed
• 2 large eggs
• 1 teas vanilla flavoring
SMALL CAKE (9” square pan)
• 1 ¾ cup plain flour
• 1 ¼ cup sugar
• 1 teas baking powder
• 1 teas baking soda
• ¾ teas salt
• ½ cup soft shortening
• ½ cup buttermilk
• 2 ripe bananas, mashed
• 2 small or medium eggs
• ¾ teas vanilla flavoring

Directions:
Directions:
1) Preheat oven to 350 degrees
2) Sift together dry ingredients into mixing bowl
3) Then add shortening, buttermilk and bananas
4) Beat 2 minutes with mixer of 150 strokes by hand
5) Then add eggs and vanilla
6) Beat additional 2 minutes
7) Pour into greased and floured cake pans
8) Bake in 350 degree oven until top is firm and cake pulls away from sides of pan
NOTE: Can make into banana cupcakes (see icing recipe below). Pour batter into paper liners in cupcake pan and bake at 400 degrees for 18-20 minutes until lightly browned and firm on top.
