3 small cans enchilada sauce
1 can fat free refried beans
8 ounces reduced fat sharp cheddar, shredded
3 Tbsp taco seasoning mix
10 light flour tortillas, soft taco size
8 ounces skim mozzarella cheese, shredded
1 pound 93% lean ground beef
1/4 cup green onions
1/2 cup sliced olives

Directions:
Preheat oven to 350º.
Cook ground beef; drain well. Add taco seasoning according to package directions. Combine 1/2 the sauce, meat mixture, beans and mozzarella cheese. Fill each tortilla and roll up. Place seam side down in 9 X 13-inch baking pan coated with cooking spray.
Cover with remaining sauce and bake for 30 minutes.
Sprinkle cheddar, green onion, and olives over the top. Bake 5 additional minutes or until cheese melts.
