• 1 stick butter or margarine
• 1 pound sausage (link), sliced
• 1 pound chicken breast, cut bite-size
• 1 pound shrimp, peeled, fresh or frozen
• 2 cups Uncle Ben’s converted rice
• 1 cup beef broth
• 1 can French onion soup
• 1 can Rotel tomatoes and chilis, diced, undrained
• 1 can (8 oz) mushrooms, stems and pieces, undrained
• Ό teas salt
• Dash of pepper
• Bay leaf

Directions:
Directions:
1) Melt butter or margarine in heavy Dutch oven
2) Brown sausage; add chicken and fresh shrimp and cook 5 minutes (if using cooked or frozen shrimp, thaw and add after chicken is cooked)
3) Add all other ingredients; stir well and bring to a boil
4) Cover and cook in 350 oven for 30 minutes, stirring after 15 minutes
5) Remove from oven and let set 30 minutes before serving
6) Remove bay leaf and enjoy!
NOTE: For spicier Jambalaya, use a hot sausage and the hot Rotel
