1 lb ground beef
½ c chopped onion
19 oz can tomatoes
2 beef bouillon cubes, crushed
2 ½ tsp chili powder (or to taste),
1 ½ cups cooked rice
1 cup shredded lettuce
1 cup shredded cheese (cheddar)

Directions:
Directions:
1. Brown beef and onion; drain off fat. Add tomatoes, including liquid, add bouillon and break up tomatoes. Stir in cooked rice. Reduce heat, cover and simmer until liquid is absorbed, about 5 minutes. Top with shredded lettuce and cheese before serving
