• 1 lb bulk pork sausage
• ¼ to ½ cup chopped green pepper (optional)
• ½ cup chopped green onion
• 16 eggs, beaten
• 1 cup milk
• 2 cups shredded cheddar cheese
• 2 cups shredded swiss or mozzarella cheese
• Salt, pepper, seasoning

Directions:
Directions:
1. Cook sausage and green pepper in microwave until sausage is done, 7-8 minutes. Remove and drain on paper towels.
2. Spread evenly in 13x9 baking dish. Mix eggs, milk, green onion, and seasonings in a large casserole, stirring well.
3. Microwave at medium power, 8-10 minutes, until partially set, stirring at 3 minute intervals.
4. Stir cheese into egg mixture and pour over sausage. Bake in oven at 350 degrees for about ½ hour, until set and browning on top
