2 tbsp olive oil
1 tbsp red wine vinegar (can use balsamic vinegar)
1 tbsp Dijon mustard
1 tbsp honey
1 tsp dried oregano
cherry tomatoes, halved
1 cup basil leaves
1/2 cup fresh parsley leaves
2 green onion, sliced
lettuce and spinach mix

Directions:
Directions:
1. Combine olive oil, vinegar, Dijon mustard, honey and oregano together. Let sit at room temperature while melding flavours.

2. Cook shredded Parmesan cheese in the oven at 350 for 3-5 minutes on cookie sheet.

3. Top lettuce and spinach with ingredients and Parmesan cheese, pour dressing over top and serve.
