2 whole eggs
2 egg yolks
1 cup sugar
½ tsp. salt
¼ cup sweet cream
½ cup butter, melted
1 tsp. baking powder
Grated rind of ½ lemon
1 tsp. almond or vanilla extract
½ tsp. powdered cardamom (optional)
3 ½ cups flour, approximately

Beat eggs and yolks with sugar, salt, cream, butter, baking powder, lemon rind, and flavoring. Gradually add flour. Knead for one or two minutes and let dough rest for ½ hour in cool place. Roll out to ¼ inch thickness. Cut in strips 1 inch by 4 inches. Cut a 2 inch split lengthwise in center of each piece. Pull one end of strip through slit to form a half knot. Fry in oil at 375 degrees for about 3 minutes, turning once. Drain on paper towels. Sprinkle with vanilla sugar.
