4 cups milk
½ cup sugar
¾ cup long-grain rice
¾ cup blanched and chopped almonds
¼ cup sherry
2 tsp. vanilla extract
1 cup chilled heavy cream, whipped to soft peaks

Directions:
Directions:
Bring milk to a boil and add sugar and rice. Stir once or twice, then lower heat to simmer and cook 25 minutes, until rice is soft, not mushy. Pour the rice into a shallow bowl to cool it quickly, and then add the chopped almonds, sherry, and vanilla. Fold whipped cream into cool rice and put this mixture into the serving dish. Chill before serving. A cold cherry or raspberry sauce or a spoonful of cherry liquer is often served on top of this Christmas porridge.

This is the rice pudding we would leave out for the Tomte if he took any of our Christmas presents away for being naughty! If he liked it, and we were very good, he would take the pudding and leave the presents.
