2 cups mashed potatoes
1 beaten egg
1 small onion finely diced
½ tsp salt
¼ tsp ground black pepper
2 tbsp olive oil
1 ½ tbsp all-purpose flour

Directions:
Directions:
1. Beat an egg in a medium size mixing bowl. Mix egg and onion with mashed potatoes. Mix in salt and pepper and flour.
2. Heat olive oil in medium size frying pan over medium heat. Scoop the potato mixture into the frying pan in flat 4 inch circle, pat with spatula to flatten the mounds to about ½ to 1 inch thick. Cook until bottom is browned, flipping the patty over until both sides are browned.

*These pancakes take a bit longer to cook and work better if they are made smaller and not flipped too much otherwise they will fall apart
