Cooking spray
1½ c. all purpose flour
¼ c. granulated sugar
¼ tsp. salt
2 envelopes of Rapidrise yeast
⅔ c. very warm milk (120º to 130º)
2 tbsp. butter or margarine, melted
2 tbsp. corn oil
1 egg

Cinnamon mixture:
3 tbsp. butter or margarine, softened
¾ c. light brown suger
1½ tsp. cinnamon

Icing:
1 c. confectioner's sugar
1 to 2 tbsp. milk
1 tbsp. butter or margarine, melted
½ tsp. vanilla extract

Directions:

Mix batter ingredients in a pre-sprayed 8X8 inch baking dish; let rest for 10 minutes. Combine cinnamon mixture in a small bowl by mixing with fork.
Top batter evenly with cinnamon mixture. Using fingers, poke topping thoroughly int batter.
Bake by placing in a COLD oven; set temperature to 350º. Bake for 25 to 30 minutes, until lightly browned and firm in center. Cool 10 minutes. Combine icing ingredients and drizzle over warm cake.
