2 (8 oz.) package cream cheese, softened
½ c. sugar
½ tsp. vanilla
2 eggs
1 graham cracker pie crust (6 oz)

Directions:
Directions:
1. Mix cream cheese, sugar and vanilla at medium speed with electric mixer until well blended. Add eggs; mix until blended.
2. Pour into crust.
3. Bake at 350º, 40 minutes or until center is almost set. Cool. Refrigerate 3 hours or overnight. Top with fresh fruit; drizzle with 2 tablespoons melted strawberry jelly, if desired.

Pumpkin variation: Mix 1/2 cup canned pumpkin, 1/2 teaspoon ground cinnamon and dash each ground cloves and nutmeg in with the cream cheese.
