3 lbs. fresh spinach

Dressing:
3/4 cup walnuts
3 Tbsp. sugar
6 Tbsp. vinegar
6 Tbsp. soy sauce

Directions:
Directions:
Pulverize dressing ingredients and chill until needed. Wash spinach. Drop in boiling salted water until color starts to change. Rinse immediately under cold water and then squeeze out excess water. Arrange on 10 dishes and then cut into 1 inch lengths with sharp knife. Try to keep arrangement intact. Pour dressing over.

Makes 10 servings.
