2 Pie Shells
2 Zucchini
1 Large Onion
1 pack of fresh mushrooms (a can is also good)
1 red pepper
1 yellow pepper
4 eggs
1 c. of Mayonnaise
1 tsp flour
Salt
Pepper
Garlic Powder

Directions:
Directions:
Dice all the vegetables
In a medium size pot, saute onion, then add mushrooms, then add the peppers and zucchini.
Add salt, pepper and garlic powder
Once finished sauteing, add in eggs, mayo, and flour
Mix well and pour into pie shells
Bake on 350 for about an hour or until top starts browning
