8 oz boned cooked pork, cut into 1” cubes
2 cups canned pineapple chunks
¾ cup green pepper strips
⅛ cup sliced celery
⅛ cup sliced mushrooms
¼ sliced onions,
⅔ cup pineapple juice
¼ cup vinegar
1 tbsp + 1 tsp cornstarch
1 tbsp soya sauce
¼ tsp salt

Directions:

1. In an 8-quart microwave safe casserole dish, combine pork, pineapple, green pepper, celery, mushrooms, onions and toss to mix.

2. In a small bowl, combine pineapple juice, vinegar, cornstarch, soya sauce, and salt. Stir til cornstarch is dissolved. Pour over pork mixture -- cover with saran wrap. Microwave on high 10 minutes, stirring occasionally. Let sit 10 minutes before serving.
