French Baguette, Olive Oil, Fresh Roma Tomatoes, Garlic Italian Parsley, Salt, Pepper

Directions:
Directions:
Seed and dice the tomatoes. Dice the garlic. Put both into a small bowl. Add olive oil and chopped parsley. Season with salt and pepper. Stir and let flavours combine at room temperature.

Slice the bread and place in baking tray. Lightly drizzle some olive oil and sprinkle some salt over the bread. Place under a broiler until lightly toasted.

Remove the bread from the broiler and top with the tomato mixture.

This is a simple recipe but you can take it to the next level by adding chopped bacon, feta cheese, or fresh buffalo mozzarella. Don't tell the Italians that I use French bread though!
