5 lbs fish 1 cup red onion (I omit) 1 cup mixed red and green pepper 1 cup mayo 1 cup Dijon mustard 2 oz sherry 4 cups panko (more or less)
Cook fish with blackening seasoning at 350 degrees for 25 minutes. Set to cool.
Blend vegetable in food processor and drain. When fish is cooled, hand mix all ingredients in large bowl and let sit for 10 minutes. Add more panko as necessary. Bake or fry. Can be flash frozen as patties before cooking.
