1 T. Unflavored gelatin
1 C. Sugar
1/4 t. Salt
4 Eggs (separated)
1/2 C. Lime juice
1/4 C. Water
1 t. Lime peel
Green food coloring
1 C. Cream
9 Inch pie shell

Directions:
Directions:
Mix gelatin, 1/2 cup of sugar, and 1/4 tsp. salt in a sauce pan.

Beat egg yokes, lime juice, and water. Stir into gelatin mixture. Cook on medium heat until boil, remove from heat.

Stir in lime peel and food coloring. Chill stirring occasionally until thick.

Beat egg whites until thick soft peak. Add remaining sugar and fold gelatin into egg whites until thick, soft peaks. Fold in whipped cream.
