Ingredients: 3 pkgs of 10 oz frozen chopped spinach (thawed, drained and dried out with paper towels) 1 lb feta cheese crumbled (can also add blue cheese crumbles if you want more cheese in this mix) 4 eggs, separated 1/2 to 3/4 lb butter (melted) but start with 1/2 lb of melted butter 1 tablespoon of dill 2 tablespoons mint (dried) salt & pepper to taste or you can sprinkle a little garlic salt to give spinach more taste 2 bunches of green onions (chopped) 1 lb of fillo (if fillo was purchased frozen allow time to thaw)

Directions:Drain and dry spinach thoroughly. Chop onions. Crumble cheese.
Beat egg whites until stiff, then add egg yolks. Mix spinach, dill, mint, salt & pepper, green onions , feta cheese. Fold eggs into spinach mixture.
After spinach mixture is ready, now it is time to melt butter and ready fillo dough for pan preparation
Generously butter a 15 x 11 pan or a 13 x 9 pan. You will want to place each sheet of fillo squarely into the pan without wrinkles or overlay. Butter each fillo sheet. You will layer approximately 12 sheets on bottom of pan and then add your spinach mixture. Spread evenly then begin to apply the remaining fillo to the top of the spinach mixture. Continue to butter each sheet of fillo including the top of the last piece. It is best to keep fillo covered with clean but damp kitchen towel while working with each sheet. This will keep the fillo cool and moist for each layer in pan. Once all fillo is placed on top of spinach you will want to score the fillo dough in strips (using diamond pattern) so it is easy to finish cutting after baking.
Bake at 350 degrees for about 35-45 minutes or until golden brown.
NOTE: IF making triangle pies for individual servings, place one sheet of fillo on tabletop, butter the fillo and then add 1 level tablespoon of spinach mixture beginning at the top square of each sheet of fillo. Fold like a flag. Place on cookie sheet, butter top of triangle and bake about 15 minutes or until golden brown. |
