1 Tb butter
1 Tb light brown sugar
½ C pecan halves
1 (7 oz) pkg fresh baby spinach, washed
1 large Granny Smith apple, thinly sliced

Directions:
Directions:
• Melt butter and sugar in a small skillet over low heat, stirring constantly.
• Add pecan halves; cook 2 to 3 minutes, turning to coat.
• Remove coated pecans from skillet, and cool on wax paper.
• Toss spinach, apple, cheese, and pecans in a serving bowl.
• Whisk oil, vinegar, salt, and pepper; drizzle over salad, tossing gently to coat.

Yields: 4 servings
