MARINADE

cup Salt
cup Brown sugar
2 quarts Water
3-4 lbs Turkey thighs or breasts

RUB

cup Ancho chili powder
2 tbsp Brown sugar
1 tbsp Ground cumin
2 tsp Cinnamon
2 tsp Coarse ground pepper
2 tbsp Coarse salt
Canola oil
cup Butter

Directions:
Directions:
Bring the water, salt, and sugar to a boil. Cool. Brine turkey for 8-12 hours.

Brush meat with oil then apply the rub. Cook the turkey for 2-3 hours. Coat with butter, wrap and cook for another hour or to 160. Let rest for 30 minutes. Slice and serve.
