2 C crushed pineapple
Juice of one lemon
1 C sugar
1 pkg gelatin
˝ C cold water
1 C cheese
˝ C chopped pecans
1˝ C whipped cream

Directions:
Directions:
• Heat pineapple and lemon.
• Sit in sugar and stir.
• Soak gelatin in ˝ C cold water for 10 minutes.
• Set aside to cool.
• When gelatin starts to jell, add 1 C cheese and nuts.
• Fold in 1 ˝ C whipped cream.
• Chill before serving.

This cheese and pineapple combination sounds awful, but it tastes fabulous! It was a recipe given to me by Don’s great grandmother, Grandma Oleta McCombie. (Rick’s mother’s mother)
