2 pie crusts (option: omit top crust)
1 c. chopped onion
1T butter
1 medium tomato, chopped
1 4oz can sliced black olives, drained
tsp garlic salt
tsp cumin
⅛ tsp pepper
1 4oz can chopped green chille
2 eggs, beaten
1 c. shredded cheddar cheese
1 c. shredded Monterey Jack cheese
sour cream and salsa

Directions:
Directions:
Place 1 pie crust in pie pan. Saute onion in margarine until onions are translucent. Stir in tomatoes, chilies, garlic salt, and cumin. In separate bowl, mix eggs and cup of both cheeses. Spread remaining cheese evenly in pie crust. Add onion mixture. Pour in egg mixture. Option: Top with second pie crust and seal edges. Bake at 375 for 45-55 minutes on lowest oven rack-- until a knife inserted comes out clean.. Top with sour cream and salsa.
