Stuffing:
1/2 cup butter
2 celery stalks, finely diced
1 large onion, finely diced
1/3 cup fresh chopped sage
10 cups cubed day-old white bread
1/2 tsp each salt and pepper
1 1/2 cups chicken broth

Turkey:
1 turkey
2 tbsp olive oil
2 tsp salt
1 tsp pepper

Preheat oven to 350ºF

Stuffing:
Melt butter in skillet over medium heat. Cook celery, onion, and sage for 5 minutes. Cool. In large bowl, combine bread, onion mixture, salt and pepper. Stir in broth.

Turkey:
Pat turkey dry with paper towel. Rub oil, salt, and pepper on skin and inside cavity. Loosely fill cavity with stuffing. Tie legs together with butcher twine and tuck in wing tips. Also put stuffing in neck cavity and close over with skin using skewer.
Place turkey breast side up in roasting pan with rack. place remaining stuffing in foil packet and cook for 30 minutes.
Allow 20 minutes for every 500 g. Thigh should register 165ºF. Baste ever 20 min for browner shin.
When done allow to rest 30 minutes with a foil tent.
