3 lbs yellow squash
1 c. water
1/2 c. chopped onions
1/2 c. butter, melted
1/2 tsp salt
1/8 tsp pepper
1 T sugar
2 eggs
1 c. saltine cracker crumbs

Directions:
Directions:
Wash and slice squash. Boil in water for 10 minutes. Drain and mash. Stir in onions and half of the butter, salt, pepper and sugar. Lightly beat the eggs and add to squash. Pour into lightly buttered casserole dish. Sprinkle cracker crumbs on top of squash. Drizzle remaining butter over crumbs. Bake at 350º for 1 hour or until top browns lightly.
