1/4 cup olive oil
1 large onion
4 cloves garlic minced
1 tsp thyme
6-8 leaves of fresh basil chopped
1 red bell pepper
1 lb yellow squash
1 lb zucchini
1/2 lb eggplant
1 lb tomato diced
1 cup water
salt and pepper to taste

Sauté onion in olive oil, until soft stir in garlic and squashes, sauté until soft add eggplant and herbs and sauté 5 minutes, add water cook 5 minutes, add tomatoes and cook 5 minutes, salt and pepper to taste.
