2 packages frozen spinach thawed and drained
2 cups cottage cheese

¼ cup butter

¼ cup flour
1 ¼ cup grated cheese (cheddar, mex blend, or jack works well)
3 eggs beaten

1 tsp salt

Directions:
Directions:
Preheat oven to 350º

1) Thaw spinach, mix with other ingredients, and bake in greased baking dish.

2) Stir 1/2 way through baking process.

3) Bake for 1 hour and 15 minutes until a tester comes out clean.
