1 c Shortening, soft
1 c Brown Sugar
1 c Granulated Sugar
2 Eggs
c Water
1 tsp Vanilla
c Coconut (optional for Coconut Haters)
1 c Peanut Butter
1 c Sifted Flour
1 tsp Salt
1 tsp Baking Soda
3 c Quick Oats, uncooked
6 oz (1 pkg) Semi-Sweet Chocolate Chips
c Chopped Pecans

Directions:
Directions:
Combine shortening, sugars, eggs, water, vanilla, and coconut; beat thoroughly.
Sift together flour, salt, and soda; add to shortening mixture.
Add peanut butter, chocolate chips, & pecans.
Blend in oats.
Drop by teaspoons onto greased cookie sheet.
Bake at 350 for 12 to 15 minutes.
