1 10 oz box of frozen chopped spinach
8 oz sharp cheddar cheese, shredded
1 lb cottage cheese (small curd)
3 eggs beaten
3 tablespoons flour (heaping)
1 teaspoon salt

Directions:
Directions:
Beat eggs, salt, flour together with a mixer

Add thawed (dried) spinach, shredded cheese and cottage cheese.

Mix all together well. Spoon into greased casserole dish and bake uncovered in a 325 degree oven for about 40-45 minutes

Double for a 3 qt casserole. If recipe is doubled you can add 5-6 oz of spinach to the recipe.
