1 1/2 cup canola oil
2 cups flour
2 cups sugar
2 tsp baking powder
2 tsp baking soda
2 tsp cinnamon
1 tsp salt
1 1/2 cups chopped walnuts
3 cups grated carrots

Mix all ingredients by hand in mixing bowl in the order above. Bake in two 8 or 9 inch round cake pans or a 9X13 cake pan, greased and with parchment paper sprayed with non-stick spray. Bake at 300 degree oven for 40-45 minutes.

Easter was the time this cake was always presented on the table. My grandma would frost it with a simple light cream cheese frosting and sprinkled with chopped walnuts. I also remember a plastic bunny rabbit that she would put in the middle of the cake. We always had Easter at her house, and it was always an opportunity to cook with her, and sneak some one on one time with my grandfather in the basement on his rocking chair, the one that I still have today. Please take care of the rocking chair, it survived two farm house fires in the 1920s. It was left to me when he passed away. I refinished it, stripping it down to the natural color. When I was sanding, the smell of smoke came through from a charred area on the seat that was sealed with paint after the house fire. That was my grandfather’s favorite chair. Keep it safe. I was rocked for many hours in that chair, as well as both of my beautiful daughters were the same.
