1 cup brown sugar
1 cup white sugar
1 cup shortening (can substitute room temperature butter)
2 eggs
1 tsp. Pure vanilla extract
1 cup crushed cornflakes
1 cup raw oatmeal oats
1 cup chopped salted peanuts
1 tsp. Baking powder
1 tsp. Baking soda
2 cups all purpose flour

Directions:

Cream sugar and shortening. Add eggs and rest of ingredients. Mix well. Roll into one inch balls and roll in white sugar. Bake at 375 degrees for 10 minutes. Cookies will spread.

These taste similar to a salted nut roll, one of my favorite candy bars when I was growing up. You can remove the cornflakes and add an additional half cup of oatmeal if desire.
