4 ahi fillets ( 7-8 oz each)
1 oz butter (2 T)
2 T crush black peppercorns
garlic
1 tsp minced shallots or onions
1 cp. heavy cream
1 tsp mustard
1 T shoyu
3 oz sliced shiitake mushrooms
white wine

Directions:
Directions:
1) sear ahi in hot oil remove immediately to stop cooking.
2) Carmeize onions and garlic in 2 T butter
3) declaze w/ ⅓-¼ cp. wine; reduce
4) add heavy cream
5) add mushrooms and boil slowly
6) add shoyu and mustard
7) add fish
